Ever thought about how beans get turned into chocolate? It’s fascinating, perhaps not quite as good as chocolate tasting that I recently uncovered though!!

Chocolate starts off as a simple cocoa bean, from the cacao tree. The beans are drawn from pods cut from the trees between May and December. The beans are covered in banana leaves as they are taken out of the pods and then left to ferment and go dark brown for around 3-9 days.

It’s the nib of the bean that is required, not the husk. This can be retrieved once the bean has been roasted and then passed through a machine which cracks it open.

The nibs are then ground and mixed with sugar and milk powder until the cocoa mixture is very fine.

Conching and tempering is then all about ensuring the chocolate develops its full flavour and is smooth and gloopy. Thre’s a cooling process and then temperature rising process to crystalise the butter and give the chocolate a perfectly firm structure and glossy finish.

It’s then simply a case of turning the this into the chocolates that everyone loves and then for you to enjoy them!
